8 Soups to Try This Winter

Soup is a beloved comfort food, and winter is the perfect time to cozy up with a bowl of warm, hearty goodness. Soups are affordable, healthy, easy to prep and easy to freeze, which makes them a perfect choice when you’re planning your meals ahead of time. And you can customize soup recipes based on the season, your preferences and your unique dietary restrictions.

Here are eight hearty, creative soups to add to your recipe repertoire this winter.  

1. Curried Butternut Squash and Chickpea Soup (vegan)

Everyone loves a butternut squash soup in the wintertime, and this chickpea and pea recipe has a protein-rich twist. The base of this soup is coconut milk, which is an excellent vegan alternative to cream, and it helps balance the turmeric and cayenne in the recipe. The best part? It only takes 15 minutes to prepare!

Healthy Highlights: 15 grams of dietary fiber, 13 grams of protein and 264 percent of your vitamin A per serving.

2. Quick Beef and Barley Soup

This soup is a full meal in one bowl, and you can make it in just under 40 minutes. The recipe uses one of the leaner cuts of protein-packed steak, and it’s chock full of vegetables and whole-grain barley, making it both filling and nutritious. And even though it’s hearty, it’s quite low in calories, at only 250 per serving.

3. Moroccan Lentil Soup (vegan)

4. Turkey and Squash Soup

Here’s a super quick dinner option for a chilly night. This recipe combines garlic, olive oil, tomatoes, chard and spices into a hearty tomato soup you can enjoy with toasted bread. You can also dress it up with a runny egg for a more satisfying meal.

7. Vegetarian Tortilla Soup (vegetarian)

This vegetarian, Mexican-inspired tortilla soup is foodie heaven in a bowl, achieving the perfect blend of crunchy and creamy textures.
