Healthy Spring Desserts

Entertaining this weekend? These easy, nutrient-packed desserts are great for spring get-togethers.

Apple Cranberry Crumble

Apple Cranberry Crumble

Serves 4

Filling

  • 3 cups chopped apple with skin
  • 1 cup fresh or frozen cranberries
  • 2 tsp brown sugar
  • 1 tsp cornstarch
  • 1 tbsp of lemon juice

Crumble Top

  • 2 tsp brown sugar
  • 2 tsp whole wheat flour
  • 2 tbsp rolled oats
  • 1 tbsp canola oil
  • 1 tsp chia seed
  • A pinch of salt

1. Mix the filling ingredients together. Spray 4 small ramekins with cooking spray and fill each with equal parts of the fruit mixture.

2. Combine all of the crumble top ingredients and mix well. Sprinkle it on top of the fruit mixture.

3. Bake at 350 degrees F for about 40 minutes or until golden on top. Serve warm.

Chocolate Avocado Pudding

Serves 4

  • 2 large avocados, peeled and chopped
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup brown sugar
  • 1/3 cup coconut milk
  • 2 tsp vanilla extract
  • 1 pinch cinnamon
  • Raspberries or mint, for garnish (optional)

1. Place avocados, cocoa powder, brown sugar, coconut milk, vanilla extract and cinnamon in a blender and blend until smooth.

2. Refrigerate pudding until chilled, about 30 minutes.
